The island of Aruba is slightly bigger than the Capital of the United States. Aruba can be found just off Venezuela in the Caribbean.

In Aruba you will find a mix of nationalities, the 'original' people there were the Indians. However, the official language in Dutch, but you can get away speaking a variety of languages including English and Spanish. The original language is Papiameno a mix of Dutch, Spanish, English, Indian and Portugesse.


With the traditional cuisine of the different ethnic groups Aruba offers you a delicious tropical kitchen.


Bread Pudding Ingredients

White Bread x 14 slices

1 litre of milk

125 grams unsalted melted butter (4 ounces)

Brown Sugar (250 grams)

eggs x 8

1 tablespoon cinnamon

2 tbsp vanilla extract

125 grams (4 ounces) raisins soaked in rum for at least 24 hours.

Almonds chopped and toasted x 25 grams worth


For Rum Sauce|For the sauce (rum)}:

1 tablespoon cornstarch

brown sugar 1 and a half cups

1 cup milk

& 3/4; cup cream

1/3 cup rum

Unsalted butter x 2 TBSP

1 tablespoon vanilla extract

How to make:

Preheat the oven to 350 degrees Fahrenheit (180 degrees C). Butter a 24 cm diameter mould that has 2-3 litres volume


Get rid of the crusts from the bread. Tear the bread into small pieces and place separate from everything else. Now add the milk, melted butter and cinnamon to the bread, mash all together and leave to stand for half an hour.


While waiting, combine the eggs, sugar and vanilla extract into a bowl and beat for 10 minutes.


Mix your bread mixture (if stood for 30 minutes) with the egg mixture and add the raisins and almonds, mix well and pour this on the surface, which should be preheated by now.


Bake for 45 minutes to 1 hour, this should leave the top golden brown.


Rum Sauce

Mix the cornstarch and the sugar together in a saucepan, on medium heat. Add the milk, cream and vanilla, stirring constantly. Stir until the mixture almost boils and then reduce the heat. Let simmer for about 4 minutes, stirring occasionally. Remove from heat and stir in butter, vanilla and rum.

Pour the rum sauce over the entire bread pudding or over each individual serving.
